Mix all the ingredients, place the steak in a container and pour the marinade on the steak, turn it over, put a lid on the container and refrigerate for 12-24 hrs.

Grilling the steak…

1. Take the steak out of the container and let it sit for about an hour to bring the steak to room temperature or close to it.

2. For gas grills; hopefully, you have a grill with two burners, so heat one part on high and the other on low. Apply carefully a good quantity of vegetable oil spray or pam to avoid sticking. Place the steak on the hot side of the grill for 1-2 minutes each side of the steak. Move it to the warm side of the grill and cook for about 9 minutes. The internal temperature should be 135F degrees.

For charcoal grills; do the same procedure, making one part of the grill the hottest possible and the other part a little less. The charcoals should turn white and you shouldn’t be able to keep your hand for 2 seconds over the hottest side of the grill. This is an indication that the grill is ready.

3. Let the steak rest by placing it on a plate and covering it with foil for about 5 minutes or so. This will help in making the steak tender and juicy because if you cut the steak too early, the juices will be hot, causing them to ooze out.

Cover the steak with foil for about 5 minutes. This will make it tender and juicy.

They are very good split open and stewed with a dressing made and warmed up separately with a little of the gravy. It takes about two hours to cook tender pigeons and three for tough ones. Tender pigeons are good stuffed and roasted. They should be buttered just before they are taken from the fire.

Are good stewed like pigeons, or roasted. Two or three onions in the dressing of wild ducks takes out the fishy taste. If ducks or any other fowls are slightly injured by being kept too long, dip them in weak sal eratus and water before cooking them.23. Baked Pig.

If you wish to have it go on the table whole, put it into a long dripping pan, put in a little water, set it in a well heated oven, bake it from two hours and a half to three, according to the size. When done take out a little of the dressing, and mix it with the chopped inwards, and feet, put in a little butter pepper and salt, let the pig stand in the open air a few minutes before it goes on the table, in order to make it crispy.24. Pressed Head.

Boil ears, forehead, and rind, (the cheek is good but is better corned and smoked), boil them till the meat will almost drop from the bones, take them up when cold, cut the meat in strips about an inch long and half an inch broad, warm it in a little of the liquor in which the meat was boiled, season it with pepper, salt, cloves, nutmeg and cinnamon, when hot take it up and put it in a strong bag, put a heavy weight upon it, and let it remain till perfectly cold.

25. Souse.

Take pig’s ears and feet, clean them thoroughly, boil them till tender, take them out and when cold split them, lay them in a deep dish, pour on boiling vinegar strongly spiced with pepper corns, cloves and nutmeg, put in a little salt. When cold they are fit to cook. Fry them in lard. They will keep good pickled for four or five weeks.

By the end of the nineteenth century, however, a rapidly expanding economy and the growing wealth it sustained extended desire for elegance in food. First, Americans bought sophisticated cookbooks from Anglophone publishers abroad.

Urbain Dubois was a celebrity chef who cooked for the Rothschild family and Prince Orloff of Russia; he published eight cookbooks. His The Household Cookery-Book: Practical and Elementary Methods was published in London in 1871; travelers purchased his book in the UK, and then brought it to the US. Pierre Caron’s 1897 volume, French Dishes for American Tables was a Mrs. Frederic Sherman’s translation of a French book dedicated specifically for American cooks. In her translator’s introduction, Mrs. Sherman wrote that she hoped the simplicity of her language would bring French culinary techniques into “the comprehension of all classes.”

Caron’s book was not a unique event; Oscar Tschirky had started to work as the Waldorf Astoria Hotel’s maitre d’hotel in 1893. At the Waldorf, Tschirky arranged functions at the hotel and saved the menus; he also collected menus from social events and professional functions across New York City. Together, these provide a revealing view of Americans’ dining habits during this era of unprecedented prosperity. At his death, his heirs donated his menu collection, along with his personal papers and professional memorabilia to Cornell University.

Tschirky’s legacy lives on: Karl Schriftgiesser published his biography, Oscar of the Waldorf in 1943, and the university’s School of Hotel Administration Library continued to add to Tschirky’s menu collection, which currently numbers more than 10,000 menus. After the First World war, and the further expansion of economic prosperity, an increasing number of books offered hosts advice on how to welcome, entertain–and impress–their guests. One example of this genre would be Winnifred Fales and Mary Northend’s Party Book (1920). But as books told hosts how to welcome their guests, the Federal government intervened. A formal prohibition on the sale and distribution of alcohol went into effect the same year that Fales and Northend’s book came out; when Prohibition was repealed in 1933, Americans viewed French wines and domestic liquors alike as essential components for their good life.
